The visitors won the toss and elected to bowl, sending the Tigers to the crease.
The hosts started strongly, scoring 138 runs before the loss of their first wicket Caleb Jewell (70 off 51 deliveries).
Five runs later, fellow Tasmanian opener Ben McDermott was dismissed for 68, leaving the hosts at 2-143.
Tim Paine was the next to fall, for just nine - before skipper Matt Wade followed suit four runs later for seven.
Jordan Silk came and went quickly for 12 before Tom Andrews fell for a duck.
The Tigers were then 6-178, which is when they started their fightback.
Gutsy knocks from Nathan Ellis (31), Jackson Bird (28 not out) and Beau Webster (20) then guided the hosts to 9-258 from their 50 overs.
Ben Dwarshuis (4-50) was the pick of the NSW bowlers, with Nathan Lyon (2-44), Liam Hatcher (2-74) and Sean Abbot (1-49) also picking up wickets.
In reply, the Blues started sharp behind openers David Warner and Gilkes.
The latter was eventually the first to fall for 17 off 27 balls - an innings that included two boundaries.
Warner then received assistance from Moises Henriques (47), Oliver Davies (27) and Kurtis Patterson (17) during the middle part of the chase - as the opener went on to score 108 off 115 deliveries.
Behind these knocks, as well as double-figures efforts from Pat Cummins (19 not out) and Sean Abbott (12), the Blues reached the target (7-259) with seven deliveries to spare.
In the loss, Jackson Bird (3-52), Peter Siddle (2-45), Beau Webster (1-35) and Riley Meredith (1-44) all claimed scalps.
This result moves the Blues to 3-0 on the season, ahead of their next match with Queensland on Wednesday, March 31.
