Opener Maddinson, who started his career with the Blues, hit nine boundaries and two sixes on his way to scoring 77 from 80 balls, before being dismissed by Sean Abbott.
The Bomaderry High School alumnus' knock helped the visitors at the SCG reach 200 in their first innings, after NSW were all out for 165 in their first innings.
Despite the hosts' star-studded line-up, only four batsmen reached double-figures, with Moises Henriques top-scoring with 67.
Mitchell Perry (3-25) and Jon Holland (3-28) both starred with the red ball for the visitors during NSW's innings.
In Victoria's innings, Matt Short (30), Marcus Harris (24) and Peter Handscomb (24) all got starts, despite Nathan Lyon's 6-21.
When play restarts on day three, NSW will resume at 1-22 - still trialing the visitors by 13 runs.
