After already playing at Newcastle, Shoals opened Saturday's 16-team tournament with a 28-5 win against hosts Camden.
This was followed by a 24-nil thrashing of the Jezza Jokes - to seal their spot on top of the pool.
These two wins matched up the Shoals up with Campbelltown in the semi-final, which the green and golds won 24-15 by scoring 24 unanswered points.
Their winning streak ended in the final, when a try at the death by Canterbury sealed the 12-7 grand final win.
During the day's action, the Shoals squad featured Sam Watts, Steven Brandon, Kieran Brandon, Mark Brandon, Angus Maddinson Scott Webb, Jake Webb, Tim George, Blake Gurney, Tyson Sue, Joey, Mumberson, Issac Mumberson, Patersio Katonivere, Tom Hill and Doug Want.
The Shoals will continue their Illawarra Rugby preparation this Saturday at the annual Kiama Sevens.
