A Marine Rescue spokesperson said they received a report of a person in the water at about 9.10pm on Sunday, August 18.
"She had been missing since 4pm, and was located 500m-1km off Callala," the spokesperson said.
He said Pol Air and police on the ground were both involved in the search for the woman.
He said crews took the woman, who was suffering from hypothermia, to Huskisson, where she was treated by ambulance.
A NSW Ambulance spokesperson said they were called at about 10pm, and assessed a woman with "breathing difficulties".
"Her breathing recovered, and she did not require transport to hospital," they said.
