The commanding win, the Sharks' 12th of the season, was set up by two-try efforts to Deejay Harris, Kiran Tranter, Jye Brooker and Max Wolfson.
Rounding out the 12-try victory at Ron Costello Oval were four-pointers to Tamati Ulukita, Sam Clune, Dane Sablowski and Kade Sampson, with skipper Carroll and Clune landing five conversions each.
This marks the sixth straight win for Abed Atallah's Sharks in the Shellharbour showdown during the past three seasons.
Looking ahead, the reigning premiers will travel to Michael Cronin Oval on Saturday to face the third-placed Gerringong Lions, while the Stingrays will take on the Warilla-Lake South Gorillas at Cec Glenholmes Oval on Sunday.
