Head's side, which drew 28-all with Mounties in the opening round, will be headlined by Shellharbour pair Jai Field and Jayden Morgan and Gerringong's Jackson Ford against Souths, who edged North Sydney 18-14 in round one.
While round two will mark the first official game for Talau's Jersey Flegg side, after a league-wide bye last weekend.
So in their first match of the season, the Jersey Flegg side will include Albion Park-Oak Flats' Jake Brisbane and Jiye Ellis, MIlton-Ulladulla's Sam McCann and Warilla-Lake South's Blair Grant.
