Jake Sidney Flanagan, 22, pleaded guilty to high range drink driving in Nowra Local Court on Monday.
Court papers said Flanagan was driving north on the Princes Highway at Falls Creek about 1.30am on March 18 when his vehicle veered to the wrong side of the road, colliding with a concrete median strip and wire dividers.
Police said the car continued into the southbound lane of the highway, before eventually coming to rest on a grassy, bushy section of the road embankment.
Flanagan produced a positive breath test and later a reading three times the legal limit, 0.155.
He told officers he had consumed eight schooners of beer in seven hours between 3pm and 10pm, as well as eating a chicken schnitzel during that time.
Magistrate Michael Stoddart fined Flanagan $2000, placed him on a two-year good behaviour bond, disqualified him from driving for six months and ordered he have an interlock device fitted to his car for two years.
