The Kiama product, who was in Turkey shooting a Nestle ice-cream commercial, recently became the first man to ride across the water on two wheels from Europe to Asia and back, by crossing the Bosporus on a specially designed motorcycle.
Special platforms were prepared in Istanbul's Ortaky and Beylerbeyi districts for the Red Bull athlete and the Bosporus was closed to maritime traffic for a period of time.
Descending to the sea surface from Ortaky on his motorcycle, the 40-year took close to 90 seconds to reach Beylerbeyi - travelling at speeds of up to 70 kilometres/hour.
After a brief rest in Beylerbeyi, Maddison made the return journey across the Marmara Sea to Ortaky.
Following the completion of the world record, Maddison, who had been training for this stunt for more than a year, admitted he was stoked to turn his Bosporus dream into a reality.
"I am very excited to ride my motorcycle intercontinental for the first time in the deep waters of the Bosporus," Maddison said in a statement.
"The Bosporus is one of the most heavily trafficked channels in the world - all kinds of sea vehicles have passed through the waters of the Bosporus, but no motorcycle has passed until now.
"We prepared for months and fearlessly researched how we could do it.
"This is the most challenging task I have ever accomplished.
"May this performance be an inspiration to all who are currently dealing with challenges.
"Either think big or don't think at all. I mean love each other and think big."
This isn't the first time Maddison, who wore an evil eye on the day, has performed death-defying stunts in the Turkish capital, after being Daniel Craig's stuntman in the 2012 James Bond film 'Skyfall'.
Other world records achieved by Maddison previously include jumping over a football field in Las Vegas in 2008 and the longest ridden by a motorcycle on water, not to mention incredible stunts such as jumping up and down the replica Arc de Triomphe in Las Vegas and riding a bike on the snow.
