The Roosters announced on Sunday morning that they had snared the 2019 NRLW Player of the Year, while fellow NSW State of Origin talent Isabelle Kelly has also left the Red V to return to the Eastern Suburbs.
While Kelly spent one season with the Dragons, Sergis has been at the club since the inaugural NRLW season in 2018.
She became a key cog in the team's attack, winning the Golden Boot award in 2019.
New Dragons NRLW head coach Matthew Head is yet to finalise his squad ahead of the 2021 season, which gets under way in August.
However, the 23-year-old told the Roosters website that it was a "dream come true" to pull on the red, white and blue jumper.
"I was the odd one out my whole life. I was a crazy Roosters supporter when I was young, and all my other immediate family members were Souths supporters," Sergis said.
"I was the ugly duckling in a way - being the odd one out - but all my extended family are Roosters supporters and they're all stoked that I'm in the red, white and blue.
"I kind of feel like I'm coming home a little bit.
"Being back in Sydney with my family and being a die-hard Roosters supporter when I was younger, I'm living out my childhood dream."
