A 77 from Maddinson guided the visitors to first innings points before Victoria dismissed the star-studded NSW line-up for 175 in their second dig.
Sean Abbott (73) was the only NSW batsmen to offer any resistance, while Scott Boland dominated with the cherry, taking 4-57.
In their second innings, player of the match Maddison, a former NSW Blue, again top-scored for his side - hitting 44 from 77 deliveries.
A steady 38 not out from Jake Fraser-McGurk then help guide Victoria to 6-143, to claim the outright win by four wickets for the visitors - the visitors first win of the season.
This was despite 4-57 from Nathan Lyon, taking his match total to 10-76.
The two sides will lock horns in another shield clash from Thursday, February 25 at Bankstown Oval.
