After electing to bat first in the season's first two-day fixture, the hosts lost opener Josh Coulter (13) cheaply, before Hyeon Parsons (31) and Nick McDonald (54) put on a 49-run second-wicket partnership.
The former's dismissal brought Nathan Thomas to the crease, who made 20 before being caught by Scott Merivale, off the bowling of Rocky Ninovic.
This left the hosts cruising at 3-109 but Thomas' dismissal proved to be the start of Norths' batting collapse.
They lost their final seven wickets for just 51 runs, with only Jordan Pearson (14) and Matt Hickmott (10) reaching double-figures - as the hosts were all out for 159 in the 68th over.
Nathan Tyrrell was the pick of the bowlers for Ex-Servos, taking 3-34 from his 16 overs.
The spinner was well supported Luke Jones (2-17) Lachlan Hall (2-22) and Ninovic (2-35) - with Manning Berry (1-27) taking the final wicket.
Play will resume on Saturday with Ex-Servos needing 160 runs for first innings points.
