Back-rower Sims injured his wrist in Monday's loss to Canterbury-Bankstown, which will see him sidelined between four and six weeks - starting with Sunday's clash with Cronulla-Sutherland on Sunday at Campbelltown Stadium.
Tyrell Fuiamaono has been recalled and will replace Sims in the starting side, while former Shellharbour Shark Euan Aitken will start at centre, in place of Brayden Wiliame (calf injury).
The only other Group Seven product in Paul McGregor's run-on side is Albion Park-Oak Flats' Adam Clune - who made his first grade debut on Monday.
Shellharbour's Trent Merrin and Gerringong pair Jackson Ford and Korbin Sims have all been named on the Red V's extended bench.
Pambula-born Jack Williams will start at lock for the Sharks.
In other South Coast rugby league news, Gerringong's Reuben Garrick will start on the wing for the Sea Eagles while Cabargo's Morgan Boyle and Moruya's Rhys Kennedy have both been named on the bench for Manly-Warringah and Brisbane respectively, for Thursday's clash at Central Coast Stadium.
The following day, Milton-Ulladulla's Jack Murchie will start from the bench for the Warriors when they battle the Cowboys at Central Coast Stadium - before Batemans Bay's Brad Arthur and his Eels host Penrith at Bankwest Stadium.
Saturday will see Nowra-born Cody Walker return to the Rabbitohs line-up, after a two-game suspension, for their fixture with the Titans - who are coached by Milton-Ulladulla's Justin Holbrook.
Sunday will pit Tathra's Adam Elliot and his Bulldogs up against the red-hot Roosters, featuring Kiama twins Josh and Brett Morris.
