After winning their opening three matches, as well as downing Thailand once again (2-1), Gray's side progressed to the semi-final.
Here they played Arminen for a spot in the decider.
Their opponents opened the scoring after just five minutes before Caitlin Burns equalised three minutes later.
The Aussies had their first lead of the match in the 18th minute, when Tayla Britton pounced on a loose ball before Millie Leard added a third just before half-time.
Seven minutes into the second half, a reverse drag flick by Emma Scriven stretched the lead to 4-1 before Arminen scored a late consolation goal to make it 4-2 at full-time - sealing Australia's progression to the final.
Then in the final, in a back and forth game, both teams had chances to win - but it was Gray's Aussies that held off the Vienna-based AHTC club 3-2, to claim the trophy.
