Nathan Murphy's side, who scored 113 goals while only conceding five on their way to winning all 21 regular season games, downed Shoalhaven Heads-Berry Blue for the second time in three weeks to take out the premiership.
In the major semi-final, on September 9, Illaroo Red thrashed Heads Blue 9-nil.
This time around, in the decider, it wasn't as lopsided, but Murphy's side still showed their class to win 5-1 at Ison Park.
In the four-goal win, which moved Illaroo Red's record to 23 wins, zero draws and zero losses on the year, Amanda Carney scored a hat-trick, while Jessica Beahan and Samantha Lloyd also found the back of the net.
The Sharks lone goal in the loss was netted by Allison Bielski.
The other grand final played on Tuesday saw St Georges Basin defeat Callala 2-nil in the women's reserve grade.
Goals from Shirley Pender and Angela Murray, in the third and 58th minutes respectively, set-up the two-goal win at Ison Park.
