Emergency services were called to Jamberoo Mountain Road about midday after reports of an accident.
Police said the 65-year-old, from Botany, was riding down Jamberoo Mountain Road with a group of friends when he lost control and hit a dirt embankment.
The motorcycle then crossed onto the other side of the road and hit a guardrail, Inspector Brian Pedersen, from Lake Illawarra police, said.
The man sustained serious head injuries and died at the scene.
"At this stage, we do not believe that excessive speed was a factor. However, that will be subject to the ongoing investigation," Inspector Pedersen said.
The road was closed in both directions after the crash.
A report will be prepared for the Coroner.
