As part of Wollongong’s Five Barrel Brewing’s launch this weekend brewer and owner Phil O’Shead has whipped up an oyster stout.
Yes, it’s made with real oysters – sourced from the Sholahaven’s Clark Oysters and thrown in shell and all during the brewing process.
Mr O’Shea got the idea for the beer during a brewery visit while in Ireland.
“I think the original concept came from the fact that oysters were a traditional pub snack,” Mr O’Shea said.
“People would finish work, go to the pub, drink a pint of stout and eat oysters with it. Somewhere along the line someone thought it’d be a good idea to actually brew beer with oysters in it.”
Mr O’Shea said the oyster flavour in the beer isn't strong, but it adds a “subtle depth of flavour”.
He’ll also have a chocolate milk stout on tap, which is “like a nice chocolately milk flavour, it’s not going to be super sweet”.
Five Barrel Brewing launch is on 6-9pm on Friday and noon to 9pm on Saturday.
