WHILE the pressure is on fire crews in the field battling fire and those in the emergency operations centre are working on the big picture – without food and water the whole thing stops.
As a result members of the Shoalhaven Catering Brigade are under no less pressure.
They are considered by everyone involved as unsung heroes, feverishly preparing hundreds of meals non-stop.
Shoalhaven Catering Brigade senior deputy captain Ingrid Noordermeer and her team were mid-morning working on making 100 lunches.
Depending on the fire behaviour that could quickly increase to 700.
“We have members on standby in our Milton kitchen and if the fire worsens we would call on them,” she said.
“Lunch is salad, cold meat, drinks and fruit, dinner will be a hot meal and sweets and breakfast is bacon, eggs, cereal and toast.”
